Kecskemét is strongly associated with apricots and apricot brandy, but the interesting story is economic rather than culinary. Fruit growing, processing and trade became part of the city’s regional specialisation alongside older livestock commerce.
The famous kecskeméti barack is therefore a product of soil, climate, transport and market organisation. Local identity formed around things that could be sold as well as things that could be monumentalised.
