Reims’ most famous export depends on geology. Beneath the Saint-Nicaise district are deep chalk quarries, or crayères, whose cool, stable conditions later proved ideal for ageing Champagne.
Wine producers inherited excavated underground space and converted it into industrial infrastructure. Bottle fermentation, riddling, disgorgement, storage and time all became part of a tightly controlled production system.
So the cellar story is not simply luxury wine in a romantic cave. It is a supply-chain story involving vineyards, legal appellation, specialised labour, bottle technology and global marketing. Reims turned a geological resource beneath the city into part of an international commercial identity.
